Ingredients
1 cup pecans
1 tablespoon butter
2 tablespoons water
¼ cup erythritol
1 teaspoon vanilla extract
1 teaspoon cinnamon
Instructions
Combine butter, water, erythritol, vanilla extract, and cinnamon in a non-stick pan. Bring the mixture to a simmer.
Stir in the pecans and continue stirring until the sugars begin to crystallize.
Remove the pan from heat and spread the candied pecans over a tray lined with parchment paper.
Leave the pecans to cool for 15 minutes before serving.
