Ingredients

1 lb ground turkey

2 medium zucchinis, diced

1 bell pepper, chopped

1 onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1 tablespoon olive oil

1 tablespoon Italian seasoning

Salt & pepper, to taste

Fresh parsley or basil, optional garnish

Instructions

Heat the Olive Oil: In a large non-stick skillet, heat the olive oil over medium heat.

Sauté Onion and Garlic: Add the chopped onion and minced garlic to the skillet. Sauté for about 2 minutes until the onion becomes translucent and fragrant.

Cook the Ground Turkey: Add the ground turkey to the skillet. Cook, breaking it apart as it browns, until it is no longer pink, about 10 minutes.

Add Tomatoes and Seasoning: Stir in the diced tomatoes (with juice), Italian seasoning, and pepper. Let the mixture simmer for 10-15 minutes to allow the flavors to combine.

Cook the Zucchini: Add the diced zucchini and cook for another 5 minutes, until the zucchini is tender but not mushy.
