Instructions

- Prepare Foil Sheets: Tear 4 large sheets of heavy-duty aluminum foil, ensuring each is large enough to wrap the chicken and vegetables securely.
- Assemble Potatoes: Evenly divide the halved baby potatoes among the center of each foil sheet to create a base layer.
- Add Chicken and Veggies: Place one chicken breast on top of the potatoes on each sheet, then add the cherry tomatoes, sliced zucchini, and broccoli florets evenly over the chicken.
- Season and Oil: Drizzle 3 tablespoons of olive oil evenly over each packet. Sprinkle 2 teaspoons Italian seasoning, 1 teaspoon garlic powder, ½ teaspoon paprika, salt, and black pepper over the chicken and vegetables to enhance flavor.
- Seal Foil Packets: Fold the foil tightly over the contents and seal to create individual packets, ensuring no steam escapes during cooking.
- Bake: Place the foil packets on a baking sheet and bake for 30–35 minutes, until chicken is fully cooked through and vegetables are tender.
- Serve: Carefully open the packets, watching for hot steam. Optionally, sprinkle grated Parmesan cheese or fresh basil on top before serving for extra flavor.

- Cut vegetables evenly to ensure consistent cooking throughout the packet.
- For crispier vegetables, open the foil during the last 5 minutes of baking and broil briefly.
- This recipe is also great for grilling; cook the foil packets over medium heat for about 25 minutes, turning occasionally.
