Ingredients

Liquids & Seasonings

  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 1 teaspoon dried thyme

Instructions

  1. Heat the Instant Pot: Set your Instant Pot to sauté mode and heat the olive oil until shimmering, preparing it for browning the meat.
  2. Brown the Beef: Add the beef stew meat to the pot and brown it on all sides for 3–4 minutes to develop deep flavor and seal in juices.
  3. Sauté Onion and Garlic: Stir in the diced onion and minced garlic, cooking until fragrant and the onion becomes translucent, about 2 minutes.
  4. Add Vegetables and Seasonings: Mix in the sliced carrots, diced potatoes, chopped celery, beef broth, dried thyme, salt, and black pepper, stirring to combine all ingredients well.
  5. Pressure Cook: Secure the Instant Pot lid and set it to cook on high pressure for 25 minutes, allowing the flavors to meld and the beef to become tender.
