Instructions
- Heat the Instant Pot: Set your Instant Pot to sauté mode and heat the olive oil until shimmering, preparing it for browning the meat.
- Brown the Beef: Add the beef stew meat to the pot and brown it on all sides for 3–4 minutes to develop deep flavor and seal in juices.
- Sauté Onion and Garlic: Stir in the diced onion and minced garlic, cooking until fragrant and the onion becomes translucent, about 2 minutes.
- Add Vegetables and Seasonings: Mix in the sliced carrots, diced potatoes, chopped celery, beef broth, dried thyme, salt, and black pepper, stirring to combine all ingredients well.
- Pressure Cook: Secure the Instant Pot lid and set it to cook on high pressure for 25 minutes, allowing the flavors to meld and the beef to become tender.
- Release Pressure Naturally: Allow the Instant Pot to release pressure naturally for 10 minutes before carefully turning the valve to vent remaining steam.
- Serve: Open the lid, give the soup a good stir, and serve warm for a comforting meal.

- For a heartier soup, add barley or noodles before pressure cooking.
