Ingredients
Chicken Drumsticks
- 2½ lb chicken drumsticks
- ⅓ cup soy sauce
- ¼ cup honey
- 2 tbsp rice vinegar
- 2 cloves garlic, minced

Coconut Rice
- 1½ cups jasmine rice
- 1 cup coconut milk
- 1 cup water
- ½ tsp salt
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the chicken drumsticks evenly and achieve a nice glaze.
- Make the glaze: In a bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated fresh ginger, and olive oil until well combined to form a sticky, savory-sweet sauce.
- Prepare the chicken: Arrange the chicken drumsticks in a single layer in a baking dish, then pour the honey soy glaze evenly over them, coating all pieces thoroughly.
- Bake the drumsticks: Place the baking dish in the preheated oven and bake for 40–45 minutes, turning the drumsticks once halfway through the cooking time to ensure they cook evenly and develop a beautiful caramelized glaze.
- Cook the coconut rice: While the chicken bakes, rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice with the coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer according to package directions (usually about 15 minutes) until the rice is tender and has absorbed all liquid.
- Serve: Once chicken is cooked through and nicely glazed, serve the drumsticks hot over a bed of fragrant coconut rice for a comforting and flavorful meal.
Notes
- For extra caramelization on the chicken, broil for 2–3 minutes after baking, watching carefully to prevent burning.
