Sticky, savory-sweet chicken drumsticks glazed with a honey and soy sauce mixture, paired with fragrant coconut rice. This comforting and flavorful Asian-inspired main course combines tender baked chicken with creamy, aromatic rice cooked in coconut milk, perfect for a satisfying family meal.

  • Total Time: 55 minutes
  • Yield: 4–6 servings

Ingredients

Chicken Drumsticks

  • lb chicken drumsticks
  • ⅓ cup soy sauce
  • ¼ cup honey
  • 2 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp olive oil

Coconut Rice

  • 1½ cups jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • ½ tsp salt

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the chicken drumsticks evenly and achieve a nice glaze.
  2. Make the glaze: In a bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated fresh ginger, and olive oil until well combined to form a sticky, savory-sweet sauce.
  3. Prepare the chicken: Arrange the chicken drumsticks in a single layer in a baking dish, then pour the honey soy glaze evenly over them, coating all pieces thoroughly.
  4. Bake the drumsticks: Place the baking dish in the preheated oven and bake for 40–45 minutes, turning the drumsticks once halfway through the cooking time to ensure they cook evenly and develop a beautiful caramelized glaze.
  5. Cook the coconut rice: While the chicken bakes, rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice with the coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer according to package directions (usually about 15 minutes) until the rice is tender and has absorbed all liquid.
  6. Serve: Once chicken is cooked through and nicely glazed, serve the drumsticks hot over a bed of fragrant coconut rice for a comforting and flavorful meal.

Notes

  • For extra caramelization on the chicken, broil for 2–3 minutes after baking, watching carefully to prevent burning.
  • Garnish the finished dish with sliced green onions or toasted sesame seeds for added flavor and visual appeal.
