Chicken
- 6 bone-in, skin-on chicken thighs

Honey Mustard Glaze
- ¼ cup honey
- ¼ cup Dijon mustard
- 1 tablespoon whole-grain mustard
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon dried thyme (or rosemary)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking dish or sheet pan with foil for easy cleanup.
- Season Chicken: Pat the chicken thighs dry with paper towels to ensure crisp skin. Season evenly with salt, black pepper, and paprika.
- Sear Chicken: Heat olive oil in a skillet over medium-high heat. Place chicken thighs skin-side down and sear for 4–5 minutes until the skin turns golden and crispy.
- Transfer to Baking Dish: Move the seared chicken thighs to the prepared baking dish, placing them skin-side up to keep the skin crispy during baking.
- Prepare Glaze: In a small bowl, whisk together honey, Dijon mustard, whole-grain mustard, minced garlic, apple cider vinegar, and dried thyme until smooth.
- Glaze Chicken: Generously brush the honey mustard glaze over each chicken thigh, ensuring they’re well coated.
- Bake: Bake in the preheated oven for 30–35 minutes, basting with more glaze once halfway through cooking. Bake until the internal temperature reaches 165°F and the glaze is caramelized.
- Optional Broil: For extra crispy skin, broil the chicken for an additional 2–3 minutes, watching carefully to avoid burning.
- Serve: Let rest briefly before serving with your choice of sides such as roasted vegetables, rice, or mashed potatoes.

- Boneless thighs can be used; reduce cooking time by 8–10 minutes to prevent overcooking.
