Instructions
- Preheat Oven: Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Prepare Egg White Mixture: In a large bowl, whisk egg white and water until frothy.
- Coat Nuts: Add mixed nuts to the egg white mixture and toss until evenly coated.
- Mix Spices: In a separate bowl, combine sugar, ground cinnamon, ground cumin, smoked paprika, cayenne pepper (if using), salt, and vanilla extract (if using).
- Season Nuts: Sprinkle the spice mixture over the coated nuts and toss thoroughly to ensure all nuts are well covered.
- Arrange on Baking Sheet: Spread the seasoned nuts in a single layer on the prepared baking sheet.
- Bake and Stir: Bake in the preheated oven for 35–40 minutes, stirring every 10 minutes to prevent sticking and promote even roasting.
- Separate and Cool: Remove from oven and immediately separate any nuts stuck together. Allow them to cool completely on the baking sheet; the nuts will crisp up as they cool.
