Instructions
- Preheat the oven: Preheat your oven to 325 °F (160 °C) and line a baking sheet with parchment paper or a non-stick baking mat to prevent sticking and facilitate easy clean-up.
- Mix dry ingredients: In a large bowl, combine the rolled oats, unsweetened coconut flakes, chopped nuts, cinnamon, and a pinch of salt. Stir these ingredients together until evenly distributed.
- Add wet ingredients: Pour the melted coconut oil, honey or maple syrup, and vanilla extract over the dry mixture. Stir thoroughly, ensuring every oat flake and nut piece is well coated with the wet ingredients for even baking and flavor.
- Spread and bake: Spread the granola mixture evenly in a single layer on the prepared baking sheet. Place it in the oven and bake for 20 to 25 minutes, stirring halfway through to ensure even toasting and prevent burning.
- Cool and store: Remove the granola from the oven and allow it to cool completely on the baking sheet; it will crisp up as it cools. Once cooled, transfer the granola to an airtight container for storage. It can be enjoyed immediately or kept for several weeks.
