Instructions
- Heat oil and cook potatoes: Heat the olive oil in a skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, until they are golden brown and crispy on the outside, about 10 to 12 minutes.
- Prepare egg mixture: In a bowl, whisk together the eggs, milk, salt, and pepper until fully combined and slightly frothy, which makes the eggs fluffy when cooked.
- Scramble the eggs: In a separate pan over medium heat, pour the egg mixture and cook, stirring gently, until the eggs are softly scrambled and cooked through but still moist and fluffy.
- Warm the tortillas: Heat the tortillas slightly, either in a microwave for 10–15 seconds or briefly on a dry skillet, so they become pliable and easier to roll.
- Assemble the burritos: Lay each tortilla flat and layer the center with a portion of crispy potatoes, scrambled eggs, shredded cheddar cheese, and cooked sausage or bacon if using.
- Roll into burritos: Fold the sides of each tortilla inward, then roll tightly from one end to the other to securely encase the filling.
- Toast the burritos: Place each burrito seam-side down in a clean skillet over medium heat. Cook for 2 to 3 minutes per side until the tortilla is golden brown and crispy, and the cheese inside melts.
- Serve: Remove the burritos from the skillet, let cool just slightly, and serve with salsa or hot sauce for dipping or topping.
