Instructions
- Preheat oven: Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper to prepare for baking the almonds.
- Mix dry ingredients: In a small bowl, combine the granulated sugar, brown sugar, ground cinnamon, and a pinch of salt to create the sweet spice mixture.
- Prepare sugar coating: Place the water and vanilla extract in a saucepan over medium heat. Stir in the sugar mixture until it dissolves and thickens slightly, forming a syrupy consistency.
- Coat almonds: Add the raw almonds to the saucepan and stir well to coat each almond evenly with the cinnamon sugar syrup.
- Bake almonds: Spread the coated almonds in a single layer on the prepared baking sheet. Bake in the preheated oven for 18 to 22 minutes, stirring halfway through to prevent sticking and ensure even cooking.
- Separate almonds: Immediately after removing from the oven, use a spatula to separate the almonds to prevent clumping as they cool.
- Cool completely: Allow the almonds to cool fully on the baking sheet. They will crisp up as they cool, developing their signature crunchy texture.
