These homemade granola bars are chewy, lightly sweet, and packed with wholesome ingredients. They’re easy to make and perfect for breakfast, lunchboxes, or an on-the-go snack—much better than store-bought bars.

Ingredients

Dry Ingredients

  • 2½ cups rolled oats
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup mix-ins (chocolate chips, dried fruit, nuts, or seeds)

Wet Ingredients

  • ½ cup honey or maple syrup
  • ½ cup peanut butter or almond butter
  • ¼ cup melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper to prevent sticking and for easy removal of the bars.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, cinnamon, salt, and your choice of mix-ins such as chocolate chips, dried fruit, nuts, or seeds. Stir well to evenly distribute all the dry ingredients.
  3. Heat Wet Ingredients: In a saucepan set over low heat, combine the honey (or maple syrup), peanut butter (or almond butter), and melted coconut oil (or unsalted butter). Stir continuously until the mixture is smooth and well incorporated.
  4. Add Vanilla: Remove the saucepan from heat and stir in the vanilla extract to enhance flavor.
  5. Combine Mixtures: Pour the warm wet mixture over the dry ingredients. Mix thoroughly until all the oats and mix-ins are fully coated with the wet mixture, ensuring the bars will hold together.
  6. Press into Pan: Transfer the mixture into the prepared baking pan. Press firmly and evenly to compact the mixture, which helps the bars hold their shape when baked.
  7. Bake: Bake in the preheated oven for 18–22 minutes, or until the edges turn lightly golden brown.
  8. Cool and Slice: Remove from oven and allow the granola bars to cool completely in the pan before slicing into 10–12 bars to prevent crumbling.

  • Press the mixture firmly into the pan for bars that hold together well.
  • For no-bake bars, skip the baking step and chill the mixture in the refrigerator for 2–3 hours until set.
