- Mash bananas: In a mixing bowl, mash the ripe bananas thoroughly until smooth, creating the natural sweet base of your cookies.
- Mix ingredients: Stir in the rolled oats, cinnamon, vanilla extract, and any optional add-ins like chocolate chips or nuts into the mashed bananas until well combined.
- Shape the cookies: Using about 1 tablespoon of dough per cookie, scoop onto the baking sheet and gently flatten each mound into a cookie shape.
- Bake: Bake the cookies in the preheated oven for 12–15 minutes or until they are set and lightly golden around the edges.
- Cool and serve: Remove the cookies from the oven and allow them to cool completely on the baking sheet before serving or storing.
Notes
- The riper the bananas, the sweeter the cookies will be, so use very ripe bananas for best results.
