Instructions
- Preheat the oven: Preheat your oven to 150°C (300°F) to prepare for baking the caramel-coated popcorn.
- Prepare popcorn mix: Place the 4 cups of popcorn and optional 1/2 cup nuts or pretzels into a large mixing bowl, ensuring they are well combined and ready for the caramel coating.
- Melt caramel ingredients: In a saucepan over medium heat, melt 1/2 cup butter along with 1/2 cup brown sugar and 2 tablespoons corn syrup, stirring occasionally until the mixture is smooth and starts to boil.
- Boil the caramel: Allow the caramel mixture to come to a boil and cook for 3 to 4 minutes without stirring to develop the caramel’s rich flavor and proper consistency.
- Add flavoring and soda: Remove the saucepan from heat and stir in 1/4 teaspoon baking soda and 1/2 teaspoon vanilla extract; the baking soda will cause the caramel to bubble and become lighter and airy.
- Coat popcorn with caramel: Immediately pour the hot caramel sauce over the popcorn mixture and stir thoroughly to evenly coat all pieces.
- Bake the caramel corn: Spread the coated popcorn onto a baking sheet in an even layer and bake in the preheated oven for 15 minutes. Stir the mixture halfway through baking to ensure even coating and prevent burning.
- Cool and serve: Remove from the oven and let the caramel corn cool completely on the baking sheet. Once cool, break into pieces and serve or store in an airtight container to maintain freshness.
