Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper to prevent sticking and for easy removal.
- Combine dry ingredients: In a large bowl, mix together the rolled oats, vanilla protein powder, baking powder, and salt until evenly distributed. This ensures an even rise and texture.
- Mix wet ingredients: In a separate bowl, whisk the almond butter, honey or maple syrup, mashed strawberries, milk, and vanilla extract until smooth and well combined. This mixture adds moisture and binding.
- Combine wet and dry mixtures: Pour the wet ingredients into the bowl with the dry ingredients and stir thoroughly until all ingredients are evenly incorporated into a thick batter.
- Press into baking pan: Transfer the oat mixture into the prepared pan and press it down firmly to create an even layer. This helps the bars hold together after baking.
- Bake the bars: Place the pan in the oven and bake for 18–22 minutes, or until the bars are set in the middle and lightly golden on top.
- Cool and slice: Remove from the oven and let the bars cool completely in the pan. Once cooled, lift out using the parchment paper and cut into 9 bars.
Notes
- Use fresh or thawed frozen strawberries for the best flavor and texture.
- Store the bars in an airtight container in the refrigerator for up to 5 days to maintain freshness.
