A classic whole roasted chicken seasoned with fresh herbs, garlic, and butter. Crispy on the outside and juicy on the inside, this herb-roasted chicken is perfect for a comforting family dinner or special occasion meal.

  • Total Time: 1 hour 30 minutes
  • Yield: 6 servings

Ingredients

Chicken

  • 1 whole chicken (45 pounds)

Herb Butter Mixture

  • 3 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Additional Ingredients

  • 1 lemon, halved
  • 1 small onion, quartered

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure a hot environment for roasting that will crisp the skin and cook the chicken evenly.
  2. Prepare Chicken: Pat the whole chicken dry thoroughly with paper towels to remove moisture from the skin, which helps in achieving a crispy texture.
  3. Make Herb Butter: In a small bowl, combine the softened unsalted butter with minced garlic, chopped fresh rosemary, chopped fresh thyme, salt, and black pepper, mixing until fully blended.
  4. Apply Herb Butter: Gently rub the herb butter mixture both under the skin and over the entire surface of the chicken to maximize flavor and moisture retention during roasting.
  5. Stuff Cavity: Insert the halved lemon and quartered onion into the chicken cavity to infuse additional aroma and moisture as it roasts.
  6. Place in Roasting Pan: Position the chicken breast-side up in a roasting pan, ensuring it is stable to roast evenly.
  7. Roast Chicken: Roast the chicken in the preheated oven for 60 to 75 minutes, or until the internal temperature reaches 165°F (74°C) when checked at the thickest part of the thigh, ensuring it is fully cooked and safe to eat.
  8. Rest Chicken: Remove the chicken from the oven and let it rest for 10 to 15 minutes; this allows the juices to redistribute throughout the meat, making it juicy and tender when carved.

Notes

  • Baste the chicken halfway through the roasting time to enhance the skin’s crispness and add extra flavor.
  • Add chopped carrots and potatoes to the roasting pan alongside the chicken for a complete, one-pan meal.
