Toast
- 2 slices whole-grain bread
Guacamole
- 1 avocado
Egg
- 1 egg
Seasoning
- Salt, to taste
- Black pepper, to taste
Instructions
- Toast the bread: Place the whole-grain bread slices in a toaster or on a skillet until they are golden brown and crispy to your liking.
- Mash the avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it gently with a fork until creamy but still slightly chunky. Season with a pinch of salt and pepper.
- Spread avocado on toast: Evenly spread the mashed avocado over the toasted bread slices.
- Fry the egg: Heat a non-stick skillet over medium heat and crack in the egg. Cook until the whites are set but yolk is still runny, about 3-4 minutes, seasoning with salt and pepper.
- Assemble and serve: Place the fried egg on top of the avocado toast. Optionally add extra seasoning such as pepper or red pepper flakes for additional flavor and serve immediately.
Notes
- For extra zing, add a few drops of fresh lime juice to the mashed avocado.
- Sprinkle red pepper flakes on top for a little heat.
- You can substitute the whole-grain bread with gluten-free bread if desired.
- To make it vegan, omit the egg or replace it with a tofu scramble.
