Crunchy whole-grain toast topped with creamy mashed avocado and a perfectly fried egg, seasoned with salt and pepper for a delicious modern breakfast classic.

  • Total Time: 10 minutes
  • Yield: 1 serving

Ingredients

Toast

  • 2 slices whole-grain bread

Guacamole

  • 1 avocado

Egg

  • 1 egg

Seasoning

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Toast the bread: Place the whole-grain bread slices in a toaster or on a skillet until they are golden brown and crispy to your liking.
  2. Mash the avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it gently with a fork until creamy but still slightly chunky. Season with a pinch of salt and pepper.
  3. Spread avocado on toast: Evenly spread the mashed avocado over the toasted bread slices.
  4. Fry the egg: Heat a non-stick skillet over medium heat and crack in the egg. Cook until the whites are set but yolk is still runny, about 3-4 minutes, seasoning with salt and pepper.
  5. Assemble and serve: Place the fried egg on top of the avocado toast. Optionally add extra seasoning such as pepper or red pepper flakes for additional flavor and serve immediately.

Notes

  • For extra zing, add a few drops of fresh lime juice to the mashed avocado.
  • Sprinkle red pepper flakes on top for a little heat.
  • You can substitute the whole-grain bread with gluten-free bread if desired.
  • To make it vegan, omit the egg or replace it with a tofu scramble.
