Ingredients
Grilled Chicken
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Mango Salsa
- 2 ripe mangoes, diced
- ½ red onion, finely diced
- 1 small red bell pepper, diced
- 1 jalapeño, seeded and minced (optional)
- Juice of 1 lime
- 2 tablespoons fresh cilantro, chopped
- Salt, to taste
Instructions
- Prepare the marinade: In a bowl, whisk together olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and black pepper to create a flavorful marinade for the chicken.
- Marinate the chicken: Place the chicken breasts in the marinade and let them soak for at least 30 minutes, or up to 8 hours in the refrigerator, allowing the flavors to deeply penetrate the meat.
- Preheat the grill: Heat your grill to medium-high heat to ensure a nice sear and even cooking for the chicken breasts.
- Grill the chicken: Place the marinated chicken breasts on the grill and cook for 6 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C), ensuring they are fully cooked and juicy.
- Make the mango salsa: While the chicken is grilling, combine diced mangoes, finely diced red onion, diced red bell pepper, minced jalapeño (if using), lime juice, chopped cilantro, and salt in a bowl. Mix well to blend the fresh flavors.
- Rest the chicken: After grilling, let the chicken breasts rest for 5 minutes; this helps the juices redistribute and keeps the meat moist.
- Serve: Top each grilled chicken breast with a generous spoonful of mango salsa and serve immediately for a refreshing and colorful meal.
Notes
- You can substitute mango with pineapple or peach for a different but equally delicious fruit salsa.
- This dish pairs wonderfully with sides such as rice, quinoa, or grilled vegetables for a complete meal.
- If you don’t have access to an outdoor grill, cooking on a grill pan or baking in the oven are good alternatives.
- Store leftovers in an airtight container and refrigerate for up to 3 days; reheat gently before serving.
