Ingredients
Grilled Chicken
- 2 large boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- Juice of ½ lemon
Salad
- 2 large romaine hearts, chopped
- ½ cup croutons
- ½ cup shaved or grated Parmesan cheese
Caesar Dressing
- ½ cup mayonnaise
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 clove garlic, minced
- ¼ cup grated Parmesan cheese
- Salt and black pepper, to taste
Instructions
- Preheat Grill: Preheat your grill or grill pan to medium-high heat to ensure it is hot enough for cooking the chicken evenly.
- Prepare Chicken Marinade: In a bowl, combine olive oil, garlic powder, salt, black pepper, paprika, and freshly squeezed lemon juice. Mix well to create the marinade.
- Coat Chicken: Brush the marinade mixture evenly over both sides of the chicken breasts, ensuring they are well coated for flavor and moisture.
- Grill Chicken: Place the chicken breasts on the grill and cook for 5 to 6 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is thoroughly cooked and has grill marks.
- Rest and Slice Chicken: Remove the chicken from the grill and let it rest for 5 minutes to retain juices, then slice into strips or bite-sized pieces.
- Make Caesar Dressing: In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, grated Parmesan cheese, salt, and black pepper until the dressing is smooth and creamy.
- Assemble Salad: In a large mixing bowl, toss together the chopped romaine lettuce and croutons.
- Toss with Dressing: Add the prepared Caesar dressing to the lettuce and croutons, tossing gently to coat everything evenly.
- Top Salad: Place the sliced grilled chicken on top of the dressed salad, and sprinkle with shaved or grated Parmesan cheese.
- Serve: Serve the salad immediately for the best taste and texture, optionally with lemon wedges on the side.
Notes
- For convenience, store-bought Caesar dressing can be used instead of making your own.
- Add grilled shrimp as a delicious variation to the dish.
- An authentic Caesar salad flavor can be enhanced by adding anchovy paste to the dressing.
- Serving with lemon wedges adds a fresh citrus zing to the salad.
