Indulge in a classic comfort food pairing with this crispy, golden grilled cheese sandwich served alongside a warm, creamy tomato soup. This simple yet satisfying recipe uses fresh ingredients and straightforward cooking techniques, perfect for a cozy lunch or dinner.

  • Total Time: 30 minutes
  • Yield: 2–4 servings

Ingredients

For the Grilled Cheese

  • 4 slices bread
  • 2 tablespoons butter, softened
  • 4 slices cheddar or American cheese

For the Tomato Soup

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 2 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 1/2 teaspoon sugar (optional)

Instructions

  1. Prepare the Tomato Soup: Heat olive oil in a pot over medium heat until shimmering. Add the diced onion and sauté until it becomes soft and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  2. Simmer the Soup: Pour in the crushed tomatoes and the vegetable or chicken broth. Stir to combine and bring the mixture to a gentle simmer. Let it simmer uncovered for 15 minutes to develop the flavors.
  3. Blend the Soup: Carefully transfer the soup in batches to a blender and blend until smooth. Alternatively, use an immersion blender directly in the pot to puree the soup to your desired consistency.
  4. Finish the Soup: Return the blended soup to the pot if needed. Stir in the heavy cream, season with salt and black pepper to taste, and add sugar if the soup tastes too acidic. Keep the soup warm on low heat while preparing the sandwiches.
  5. Make the Grilled Cheese Sandwiches: Butter one side of each slice of bread generously. Place one slice of cheese between two slices of bread with the buttered sides facing out.
  6. Cook the Sandwiches: Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for 3 to 4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  7. Serve: Slice the grilled cheese sandwiches if desired. Serve hot alongside the warm tomato soup for a comforting and delicious meal.

Notes

  • Add fresh basil to the tomato soup for an aromatic flavor boost.
  • Try different cheese combinations like mozzarella and provolone for a unique taste.
  • If you prefer a richer soup, replace heavy cream with half-and-half or eliminate it for a lighter option.
  • For gluten-free dietary needs, substitute the bread with gluten-free bread varieties.
