Ingredients
4 boneless, skinless chicken breasts (about 1.5 lbs)
4 tbsp extra virgin olive oil
1 cup plain Greek yogurt
4 whole wheat pita breads
4 cloves garlic (minced)
Juice of 2 lemons (about 1/4 cup)
Salt and pepper to taste
Fresh vegetables (cucumbers, tomatoes, red onion)
For the Tzatziki Sauce:
1 cup plain Greek yogurt
2 cloves garlic (minced)
Juice of 1 lemon
Salt and pepper to taste
Instructions
Marinate the Chicken:
In a bowl, mix olive oil, minced garlic, lemon juice, salt, and pepper. Add the chicken breasts to the bowl and let them marinate for at least 15 minutes.
Preheat the Grill:
Preheat your grill or grill pan over medium-high heat.
Grill the Chicken:
Grill the marinated chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once done, remove the chicken and let it rest before slicing.
Prepare the Toppings:
While the chicken is resting, slice your choice of fresh vegetables (such as cucumbers, tomatoes, and red onion).
Make the Tzatziki Sauce:
In a small bowl, mix Greek yogurt, minced garlic, lemon juice, and season with salt and pepper. Stir until well combined.
Warm the Pita:
Warm the pita bread on the grill or skillet for about 1 minute per side until soft and slightly toasted.
Assemble the Gyros:
To assemble, place the sliced grilled chicken in the center of each warm pita. Top with fresh veggies and a generous dollop of tzatziki sauce.
Serve:
Serve immediately, or wrap the gyros in foil for easy eating on the go.
Notes
You can adjust the amount of lemon juice in the marinade or tzatziki sauce to your taste preference.
For extra flavor, add some herbs like oregano or thyme to the chicken marinade.
These gyros are customizable! Add or omit your favorite toppings such as feta cheese or olives.
