Ingredients
Cookie Base:
- 1 cup flour
- ⅓ cup cocoa powder
- ½ cup butter
- 1 egg
- ½ cup sugar
- ½ tsp baking powder
Peanut Butter Layer:
- ½ cup peanut butter
- 2 tbsp powdered sugar
Chocolate Topping:
- ½ cup chocolate chips
- 1 tbsp butter
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookie base.
- Cream Butter and Sugar: In a mixing bowl, cream together the ½ cup butter and ½ cup sugar until smooth and creamy. Then, mix in the egg until fully incorporated.
- Add Dry Ingredients: Gradually add the 1 cup flour, ⅓ cup cocoa powder, and ½ tsp baking powder to the wet ingredients. Mix until a dough forms.
- Bake Cookie Base: Spread the cookie dough evenly into a 9-inch baking pan. Bake in the preheated oven for 12 to 15 minutes until set but still soft.
- Prepare Peanut Butter Layer: While the cookie is warm, mix ½ cup peanut butter with 2 tbsp powdered sugar until smooth. Spread this creamy peanut butter mixture evenly over the warm cookie base.
- Make Chocolate Topping: Melt ½ cup chocolate chips together with 1 tbsp butter until smooth, either in a microwave or using a double boiler. Drizzle the melted chocolate ganache over the peanut butter layer.
- Cool and Serve: Allow the assembled cookie to cool completely to set the layers. Once cooled, slice into 8–10 pieces and serve.

- This recipe can also be made in a skillet to create a cookie cake presentation.
