Ingredients

  • 2 tbsp powdered sugar

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookie base.
  2. Cream Butter and Sugar: In a mixing bowl, cream together the ½ cup butter and ½ cup sugar until smooth and creamy. Then, mix in the egg until fully incorporated.
  3. Add Dry Ingredients: Gradually add the 1 cup flour, ⅓ cup cocoa powder, and ½ tsp baking powder to the wet ingredients. Mix until a dough forms.
  4. Bake Cookie Base: Spread the cookie dough evenly into a 9-inch baking pan. Bake in the preheated oven for 12 to 15 minutes until set but still soft.
  5. Prepare Peanut Butter Layer: While the cookie is warm, mix ½ cup peanut butter with 2 tbsp powdered sugar until smooth. Spread this creamy peanut butter mixture evenly over the warm cookie base.
  6. Make Chocolate Topping: Melt ½ cup chocolate chips together with 1 tbsp butter until smooth, either in a microwave or using a double boiler. Drizzle the melted chocolate ganache over the peanut butter layer.
