Ingredients

Meat and Oil

  • 1 pound smoked sausage, sliced

Vegetables

  • 3 cups cabbage, shredded
  • 2 carrots, sliced
  • Optional: 1-2 potatoes, diced
  • Optional: fresh parsley, chopped for garnish

Liquids and Seasonings

  • 4 cups chicken or vegetable broth
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Sauté sausage, onion, and garlic: Heat the olive oil in a large pot over medium heat. Add the sliced smoked sausage, chopped onion, and minced garlic. Cook, stirring occasionally, until the sausage is browned and the onions are softened, about 5-7 minutes.
  2. Add vegetables and broth: Stir in the shredded cabbage, sliced carrots, and optional diced potatoes if using. Pour in the chicken or vegetable broth, then add the paprika, salt, and pepper. Mix well to combine all the ingredients.
  3. Simmer the soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer gently for 20–25 minutes, or until the vegetables are tender and the flavors meld together.
  4. Finish and garnish: For a thicker soup, mash a portion of the cooked vegetables against the side of the pot before serving. Ladle the soup into bowls and garnish with chopped fresh parsley if desired.
