Bacon and Glaze
- 4 slices bacon

Sandwich Components
- 2 eggs
- 2 brioche buns, toasted
- 2 oz Brie cheese, sliced

Instructions
- Cook Bacon: Place the bacon slices in a cold skillet and cook over medium heat until crisp and browned. Remove bacon and drain on paper towels.
- Glaze Bacon: Brush each slice of cooked bacon generously with strawberry jam. Return the glazed bacon to the skillet over low heat for about 1-2 minutes to warm and set the glaze without burning.
- Fry Eggs: In the same skillet, add a small amount of butter over medium heat. Crack in the eggs and cook to your desired doneness, whether sunny side up, over easy, or fully cooked through.
- Assemble Sandwiches: Place a toasted brioche bun bottom on a plate. Layer on the fried egg, slices of Brie cheese, a handful of fresh arugula, and the strawberry-glazed bacon. Top with the remaining bun.
- Serve: Serve the breakfast sandwiches immediately while the Brie is warm and slightly melty for the best flavor experience.
