Instructions
- Season the Chicken: In a large bowl, toss the chicken strips with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper until evenly coated with the spices.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5–7 minutes, stirring occasionally, until the chicken is cooked through and slightly browned. Remove the chicken from the skillet and set aside.
- Sauté the Vegetables: Using the same skillet, add the sliced bell peppers and onion. Cook for 4–5 minutes, stirring often, until the vegetables become tender-crisp and develop a light char for enhanced flavor.
- Combine Chicken and Vegetables: Return the cooked chicken to the skillet with the peppers and onions. Squeeze the juice of one lime over the mixture and toss well to combine all the ingredients evenly.
- Finish Cooking: Cook the combined mixture for another 1–2 minutes, allowing the flavors to meld and ensuring everything is heated through well.
- Serve: Remove from heat, garnish with fresh cilantro if desired, and serve the sizzling chicken fajitas warm with tortillas of your choice.
Notes
- For extra flavor, marinate the chicken with the spices and olive oil for up to 24 hours before cooking.
- Using a cast-iron skillet helps achieve the best sear on the chicken and vegetables.
- Serve with additional toppings such as sour cream, guacamole, salsa, or shredded cheese for added taste.
