Ingredients
2 large cucumbers, diced
1 ripe avocado, diced
¼ red onion, finely chopped
¼ cup fresh cilantro, chopped
1 tablespoon olive oil
1 tablespoon lime juice
Salt and pepper, to taste
Instructions
In a large bowl, mix together diced cucumber, avocado, red onion, and cilantro.
Drizzle with olive oil and lime juice.
Gently toss the salad, being careful not to mash the avocado.
Season with salt and pepper. Toss again lightly.
Serve immediately or refrigerate for up to 30 minutes for a slightly chilled version.
