Whipped Feta
- 1 cup feta cheese
- ½ cup Greek yogurt
- 1 tbsp olive oil
Hot Honey
- ¼ cup honey
- ½ tsp chili flakes
Instructions
- Preheat Oven: Set your oven to 425°F (220°C) to prepare for roasting the sweet potatoes to a crispy finish.
- Cook Sweet Potatoes: Boil the sweet potatoes for 15–20 minutes until they are fork-tender, ensuring they are fully cooked and soft inside.
- Smash Potatoes: Place the boiled sweet potatoes on a baking sheet and gently smash each one with the bottom of a glass or a fork to flatten them slightly for crisping.
- Season and Oil: Drizzle the smashed sweet potatoes with olive oil and season with salt and pepper evenly to enhance flavor and aid in crisping.
- Roast: Roast the potatoes in the preheated oven for 20–25 minutes until the edges are golden and crispy.
- Prepare Whipped Feta: Blend the feta cheese, Greek yogurt, and olive oil until smooth and creamy to create a rich spread.
- Make Hot Honey: Warm the honey gently with chili flakes so that the flavors meld, creating a sweet and spicy syrup.
- Assemble and Serve: Spread the whipped feta on a serving plate, top with the crispy smashed sweet potatoes, and finish by drizzling the hot honey over the top for an irresistible combination.
