Ingredients
For the Chicken Schnitzel:
- 4 chicken breasts, pounded thin
- 1 cup flour
- 2 eggs, beaten
- 2 cups breadcrumbs (panko recommended)
- 1/2 cup Parmesan, grated
- 1 tsp paprika
- Salt & pepper to taste
Instructions
- Preheat oven to 425°F. Line baking sheet with parchment.
- Dredge the chicken: coat in flour, dip in beaten eggs, then coat with breadcrumb-Parmesan mixture.
- Place on baking sheet, spray with cooking spray.
- Bake for 20–25 minutes until crispy and cooked through.
