Ingredients

For the Chicken Schnitzel:

  • 4 chicken breasts, pounded thin
  • 1 cup flour
  • 2 eggs, beaten
  • 2 cups breadcrumbs (panko recommended)
  • 1/2 cup Parmesan, grated
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 425°F. Line baking sheet with parchment.
  2. Dredge the chicken: coat in flour, dip in beaten eggs, then coat with breadcrumb-Parmesan mixture.
  3. Place on baking sheet, spray with cooking spray.
  4. Bake for 20–25 minutes until crispy and cooked through.
