Ingredients
2 medium zucchinis, thinly sliced (use a mandoline for uniform slices)
1/2 cup almond flour (or breadcrumbs for non-keto version)
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
Salt and pepper to taste
1 large egg, beaten
Cooking spray (olive oil or avocado oil works best)
Instructions
Preheat the Air Fryer:
Set your air fryer to 400°F (200°C).
Prepare the Coating:
In a bowl, mix together almond flour (or breadcrumbs), Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.
Coat the Zucchini:
Dip each zucchini slice into the beaten egg, ensuring it’s well-coated.
Then, coat the zucchini slices in the almond flour mixture, shaking off any excess.
Air Fry:
Lightly spray the air fryer basket with cooking spray.
Arrange the coated zucchini slices in a single layer in the basket. Spray the tops lightly with cooking spray for extra crispiness.
Cook:
Air fry for 8-10 minutes, flipping the zucchini slices halfway through, until they’re golden and crispy.
If they’re not crispy enough, add an extra 2-3 minutes.
Serve:
Serve immediately with your favorite dipping sauce, such as ranch, marinara, or a spicy sriracha mayo.
Notes
Slicing Tip: For the best results, use a mandoline slicer to ensure even slices.
Moisture Removal: Pat the zucchini slices with a paper towel before coating to remove excess moisture for crispier chips.
Batch Cooking: Avoid overcrowding the air fryer basket. Cook in batches for the crispiest results.
Custom Seasoning: You can add cayenne pepper for a spicy kick or Italian seasoning for a more savory flavor.
Storage: Store leftovers in an airtight container at room temperature for up to 2 days, though they’re best enjoyed fresh.
