Ingredients

1 lb. cod fillets

1/4 cup panko bread crumbs

1/4 cup Italian bread crumbs

2 eggs

2 tbsp milk

1 tsp garlic powder

1 tsp lemon & pepper seasoning

1 tsp Italian seasoning

1 tsp Mrs. Dash chicken grilling blend

Cooking oil – to spray the basket and fillets

Sliced lemon (for garnish)

Chopped parsley (for garnish)

Instructions

Prepare the Cod Fillets:

If using frozen cod, make sure the fillets are thawed. Once thawed, pat the fillets dry using a paper towel or let them sit on a rack to air dry. This will help the coating stick better.

Prepare the Coating Mixtures:

In a bowl, mix together panko bread crumbs and Italian bread crumbs.

In a second bowl, whisk together eggs and milk. Add garlic powder, lemon & pepper seasoning, Italian seasoning, and Mrs. Dash chicken grilling blend. Whisk until everything is well combined.

Bread the Cod Fillets:

Dip each cod fillet into the egg mixture, ensuring both sides are well coated.

Then roll the coated fillets in the breadcrumb mixture until they are lightly breaded on all sides.

Preheat the Air Fryer and Cook the Fillets:

Preheat your air fryer to 350°F (175°C).

Place the breaded cod fillets in the air fryer basket, ensuring they are not overcrowded. Lightly spray the fillets with cooking oil to help them crisp up.

Air fry the fillets for 8 minutes.

Flip and Finish Cooking:

After 8 minutes, remove the air fryer basket and carefully flip the fillets over using tongs.
