A rich and flavorful chicken dish cooked in a creamy garlic sauce with sun-dried tomatoes and spinach. Perfect served over pasta, rice, or mashed potatoes.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 4 boneless chicken breasts
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Sauce

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning

Instructions

  1. Season the chicken: Pat the 4 boneless chicken breasts dry and season both sides generously with salt and black pepper to enhance flavor.
  2. Heat the olive oil: Pour 2 tablespoons of olive oil into a large skillet and warm it over medium heat to prepare for cooking the chicken.
  3. Cook the chicken: Place the seasoned chicken breasts into the hot skillet and cook each side for 6–7 minutes until they turn golden brown and are fully cooked through. Remove the chicken and set aside on a plate.
  4. Sauté the garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  5. Add liquids: Pour in ½ cup chicken broth and 1 cup heavy cream, stirring to combine and create a creamy base for the sauce.
  6. Incorporate sun-dried tomatoes and seasoning: Mix in ½ cup chopped sun-dried tomatoes, ½ cup grated Parmesan cheese, and ½ teaspoon Italian seasoning. Stir well to blend the flavors.
  7. Add the spinach: Stir in 1 cup fresh spinach and cook until the spinach is wilted and well incorporated into the sauce.
  8. Simmer the chicken: Return the cooked chicken breasts to the skillet, nestling them into the sauce, and let everything simmer together for about 5 minutes to meld the flavors.
  9. Serve: Serve the chicken warm with the creamy sauce spooned over the top. This dish pairs wonderfully with pasta, rice, or mashed potatoes.

Notes

  • For richer flavor, substitute chicken breasts with chicken thighs.
  • This dish pairs well with pasta, rice, or crusty bread for a complete meal.
