Ingredients
Chicken
- 2 large boneless, skinless chicken breasts
- Salt and black pepper, to taste
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- 1 tablespoon olive oil
Alfredo Sauce
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1½ cups heavy cream
- 1 cup freshly grated Parmesan cheese
- ¼ teaspoon nutmeg (optional)
- Salt and black pepper, to taste
Pasta
- 12 ounces fettuccine pasta
- Fresh parsley, chopped, for garnish
Instructions
- Cook Pasta: Cook fettuccine according to package directions until al dente. Reserve ½ cup of the pasta cooking water, then drain the pasta and set aside.
- Season Chicken: Season both sides of the chicken breasts evenly with salt, black pepper, garlic powder, and Italian seasoning.
- Cook Chicken: Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 5–6 minutes on each side until golden brown and cooked through. Remove from skillet and slice into strips once slightly cooled.
- Prepare Alfredo Sauce: In the same skillet, reduce heat to medium and melt the butter. Add minced garlic and sauté for about 30 seconds until fragrant but not browned.
- Simmer Cream: Pour in the heavy cream and bring to a gentle simmer, stirring frequently.
- Add Cheese: Gradually stir in the grated Parmesan cheese until melted and the sauce is smooth and creamy.
- Season Sauce: Add nutmeg, salt, and black pepper to taste, adjusting seasoning as desired.
- Combine Pasta and Chicken: Add the cooked fettuccine and sliced chicken to the sauce. Toss everything together to coat evenly, adding reserved pasta water gradually as needed to reach desired sauce consistency.
- Garnish and Serve: Sprinkle chopped fresh parsley over the dish for color and freshness. Serve immediately while warm and creamy.
Notes
- Use freshly grated Parmesan cheese for the best texture and flavor in the sauce.
- The sauce thickens as it stands, so serve immediately to enjoy the best creamy consistency.
- For a variation, add steamed broccoli or fresh spinach when adding pasta to the sauce.
- When reheating leftovers, do so gently over low heat to prevent the sauce from separating.
