- ½ cup crushed pistachios
- 1 tbsp chopped fresh parsley
Instructions
- Blend the Cheeses and Cranberry Sauce: In a mixing bowl, combine the cream cheese, goat cheese (or cheddar), sugar-free cranberry sauce, salt, and pepper. Blend until the mixture is smooth and well incorporated.
- Shape and Chill: Form the cheese mixture into a log shape using your hands or plastic wrap for help. Place the log in the refrigerator and chill for 30 minutes to firm up.
- Roll in Pistachios and Herbs: After chilling, roll the cheese log evenly in the crushed pistachios and chopped parsley, pressing gently to adhere the coating firmly to the cheese.
- Serve: Arrange the cranberry pistachio cheese log on a serving platter alongside crackers or fresh vegetables for dipping and enjoy as a festive appetizer.
Notes
- This cheese log can be prepared 2–3 days in advance; just keep refrigerated until serving.
