Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1 Tbsp granulated sugar
1 Tbsp baking powder
½ tsp salt
1 cup milk
1 large egg
2 Tbsp unsalted butter, melted
½ cup smoked gouda, shredded
Olive oil or non-stick spray, for greasing
Honey, for drizzling
Instructions
Preheat waffle iron and lightly grease with olive oil or non-stick spray.
In a bowl, whisk cornmeal, flour, sugar, baking powder, and salt.
In another bowl, whisk milk, egg, and melted butter.
Pour wet mixture into dry ingredients; stir until just combined. Fold in shredded smoked gouda.
Spoon ~2 Tbsp batter into each waffle compartment. Cook until golden and crisp, about 2–3 min per batch.
Transfer warm bites to a plate and immediately drizzle with honey.
Serve while warm as appetizers, brunch treats, or snack bites.
