Ingredients
Base
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
Coconut Topping
- 2 cups shredded coconut
- ¾ cup granulated sugar
- 2 large eggs
- ¼ cup milk
- 1 tsp vanilla extract
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper to prevent sticking and ensure easy removal of the bars.
- Make the Base: In a mixing bowl, combine the all-purpose flour, granulated sugar, and melted unsalted butter. Stir until the mixture becomes crumbly and cohesive.
- Form the Base Layer: Press the crumbly mixture firmly and evenly into the bottom of the prepared pan, creating a solid base layer for the bars.
- Bake the Base: Bake this base in the preheated oven for 12 to 15 minutes or until it turns lightly golden, which helps it set before adding the topping.
- Prepare the Coconut Topping: While the base bakes, whisk together the shredded coconut, granulated sugar, eggs, milk, and vanilla extract in another bowl until well blended.
- Assemble the Bars: Pour the coconut mixture evenly over the warm, partially baked base to create the topping layer.
- Bake the Assembled Bars: Return the pan to the oven and bake for an additional 25 to 30 minutes until the coconut topping is set and lightly golden on top.
- Cool and Serve: Remove the bars from the oven and allow them to cool completely in the pan. Once fully cooled, slice into 12 bars and serve.
Notes
- Allow the bars to cool completely for clean, neat slices.
- For an extra layer of flavor, sprinkle toasted coconut on top before the final bake or just after baking.
- Store the bars in an airtight container at room temperature; they will keep fresh for up to 3 days.
