Ingredients
Chicken:
- 2 large boneless, skinless chicken breasts

Breading & Coating:
- ½ cup all-purpose flour
- 2 large eggs
- 1 cup Italian-style breadcrumbs

- 1½ cups marinara sauce
- 1½ cups shredded mozzarella cheese

Instructions
- Prep Chicken: Preheat the oven to 400°F (200°C). Slice the chicken breasts horizontally to create thinner cutlets, then pound them to an even thickness. Season each piece evenly with salt and black pepper.
- Prepare Breading Stations: Arrange three shallow bowls: one with all-purpose flour, another with beaten eggs, and a third with a mixture of Italian-style breadcrumbs, grated Parmesan cheese, garlic powder, and Italian seasoning.
- Coat Chicken: Dredge each chicken piece first in the flour, shaking off excess, then dip into the beaten eggs, and finally coat thoroughly with the breadcrumb and cheese mixture.
- Fry Chicken: Heat olive oil in a large skillet over medium heat. Fry each breaded chicken cutlet for about 3 to 4 minutes on each side until golden brown and crisp, then remove from skillet.
- Assemble and Bake: Place the fried chicken pieces in a baking dish. Spoon marinara sauce evenly over each cutlet, then sprinkle shredded mozzarella cheese on top.
- Bake: Bake in the preheated oven for 15 to 18 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven and garnish with fresh basil or parsley if desired. Serve hot with your favorite sides.
Notes
- For extra crispiness, substitute Italian-style breadcrumbs with panko breadcrumbs.
- You can air-fry the breaded chicken at 375°F for 10–12 minutes before adding marinara sauce and cheese to reduce frying time.
