Instructions
- Cook Bacon: In a skillet, cook the bacon slices until crisp. Remove the bacon and set aside. Drain most of the grease from the pan, leaving a small amount for flavor.
- Cook Potatoes: Add the diced potatoes (or hash browns) to the skillet and cook until they turn golden brown and tender. Remove them from the pan and set aside.
- Prepare Egg Mixture: In a bowl, whisk together the eggs, milk, salt, and black pepper until combined and slightly frothy.
- Scramble Eggs: Melt butter in the skillet over medium heat. Pour in the egg mixture and cook while stirring gently until the eggs are fluffy and fully cooked.
- Warm Tortillas: Warm the flour tortillas either in a dry skillet for a few seconds on each side or in the microwave until soft and pliable.
- Assemble Burritos: On each tortilla, layer the cooked potatoes, scrambled eggs, crispy bacon, and shredded cheddar cheese evenly.
- Roll Burritos: Fold in the sides of the tortilla and then roll it tightly into a burrito shape, ensuring all the filling is securely wrapped.
- Serve or Store: Serve the burritos immediately while warm, or wrap them in foil or plastic wrap for storage in the refrigerator or freezer as desired.
