Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with butter or non-stick spray to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine rolled oats, brown sugar, baking powder, cinnamon, and salt. Stir until evenly mixed to ensure leavening and flavor distribution.
- Prepare Wet Ingredients: In a separate bowl, whisk together eggs, milk, melted butter (or coconut oil), and vanilla extract until smooth and well combined.
- Combine Wet and Dry: Pour the wet ingredients into the bowl of dry ingredients. Stir gently until the mixture is just combined, avoiding overmixing which can toughen baked goods.
- Add Chocolate Chips: Fold in the chocolate chips evenly throughout the batter for pockets of melted sweetness.
- Transfer and Bake: Pour the oatmeal batter into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 30 to 35 minutes until the top is set, lightly golden, and a toothpick inserted comes out mostly clean.
- Cool and Serve: Allow the baked oatmeal to cool slightly before slicing and serving warm. This improves texture and allows it to set fully.
