Instructions

  2. Add Garlic and Spices: Stir in the minced garlic, ground cumin, chili powder, and smoked paprika. Cook this mixture for about 30 seconds until the spices become fragrant.
  3. Add Tomatoes and Broth: Pour in the canned diced tomatoes along with their juices and the chicken broth. Increase the heat slightly and bring the soup to a gentle simmer.
  4. Add Chicken, Beans, and Corn: Stir in the shredded cooked chicken, drained black beans, and frozen or canned corn into the simmering soup.
  5. Simmer the Soup: Let the soup simmer uncovered for 15–20 minutes, allowing all the flavors to meld together and the soup to slightly thicken.
