Ingredients
Soup Base
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
Main Ingredients
- 1 lb chicken breast
- 3 cups fresh spinach
- 1 cup heavy cream
- Salt and pepper, to taste
Instructions
- Heat the oil: Warm 1 tablespoon of olive oil in a large pot over medium heat until shimmering.
- Sauté aromatics: Add the diced onion to the pot and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Simmer chicken and broth: Add the chicken breast to the pot along with 6 cups of chicken broth. Bring the mixture to a gentle simmer, then cover and cook for 20 minutes or until the chicken is fully cooked.
- Shred chicken: Remove the chicken breast from the pot and shred it finely using two forks. Return the shredded chicken to the pot.
- Add cream and spinach: Stir in 1 cup of heavy cream and 3 cups of fresh spinach. Continue cooking over low heat until the spinach is wilted and the soup is heated through.
- Season and serve: Taste and season the soup with salt and pepper as needed. Ladle into bowls and serve warm.
Notes
- Adding freshly grated Parmesan cheese enhances the flavor and creaminess.
- Serves great alongside crusty bread for dipping.
