Ingredients

Soup Base

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth

  • 1 cup heavy cream
  • Salt and pepper, to taste

Instructions

  1. Heat the oil: Warm 1 tablespoon of olive oil in a large pot over medium heat until shimmering.
  2. Sauté aromatics: Add the diced onion to the pot and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Simmer chicken and broth: Add the chicken breast to the pot along with 6 cups of chicken broth. Bring the mixture to a gentle simmer, then cover and cook for 20 minutes or until the chicken is fully cooked.
  4. Shred chicken: Remove the chicken breast from the pot and shred it finely using two forks. Return the shredded chicken to the pot.
  5. Add cream and spinach: Stir in 1 cup of heavy cream and 3 cups of fresh spinach. Continue cooking over low heat until the spinach is wilted and the soup is heated through.
