Ingredients
Chicken Mixture
- 3 cups cooked shredded chicken
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 teaspoon taco seasoning
Cheese and Chips
- 2 cups shredded cheddar cheese
- 4 cups Nacho Cheese Doritos, lightly crushed
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking and prepare for layering.
- Mix Chicken Mixture: In a large bowl, combine the cooked shredded chicken, cream of chicken soup, sour cream, diced tomatoes with green chilies (drained), and taco seasoning. Stir everything together until well blended.
- Layer Doritos: Spread half of the lightly crushed Nacho Cheese Doritos evenly across the bottom of the prepared baking dish to form the first crunchy layer.
- Add Chicken Mixture: Spoon half of the chicken mixture evenly over the layer of Doritos, spreading it out gently but thoroughly.
- Sprinkle Cheese: Sprinkle half of the shredded cheddar cheese over the chicken mixture to create a cheesy layer.
- Create Second Layer: Repeat the layering process with the remaining crushed Doritos, followed by the remaining chicken mixture, and finish with the remaining shredded cheddar cheese on top.
- Bake: Place the casserole in the preheated oven and bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese is fully melted and golden in spots.
- Cool and Serve: Remove from the oven and allow the casserole to cool slightly for a few minutes to set before serving. This helps keep the layers intact and makes it easier to serve.
Notes
- Add black beans or corn to the chicken mixture for extra texture and flavor.
- Best served fresh to maintain the slight crunchiness of the Doritos.
- Letting the casserole cool a bit before serving helps prevent it from being too runny.
