Ingredients

Instructions

  1. Brown the Beef and Onion: In a large pot over medium-high heat, cook the ground beef and diced onion together until the beef is fully browned and the onions are softened. Drain any excess grease to keep the dish from becoming too oily.
  2. Add Garlic: Stir in the minced garlic and cook for about 1 minute until fragrant, making sure not to brown the garlic.
  3. Combine Seasoning and Liquids: Add the taco seasoning packet, canned diced tomatoes (including juices), beef broth, and uncooked pasta to the pot. Stir well to combine all ingredients evenly.
  4. Simmer Pasta: Bring the mixture to a rolling boil, then reduce heat to a simmer. Cover the pot and cook for 10 to 12 minutes, or until the pasta is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
  5. Incorporate Cheese and Sour Cream: Remove the pot from heat and stir in the shredded cheddar cheese and sour cream until the sauce is creamy and smooth.
