Instructions

  2. Mix Ingredients: In a large mixing bowl, combine the ground beef, taco seasoning, crushed tortilla chips, beaten eggs, salsa, finely diced onion, shredded cheese, milk, salt, and black pepper. Mix using your hands or a spoon gently until all ingredients are evenly incorporated, being careful not to overmix to keep the meatloaf tender.
  3. Shape Loaf: Transfer the meat mixture into the prepared loaf pan. Shape it evenly into a loaf shape, pressing gently to compact the mixture.
  4. Add Topping: Spread the 1/2 cup of salsa evenly over the top of the meatloaf for added moisture and flavor.
  5. Bake: Place the loaf pan in the preheated oven and bake for 45 to 50 minutes, or until the internal temperature reaches 160°F (71°C), ensuring the meat is fully cooked.
  6. Add Cheese: Remove the meatloaf from the oven and sprinkle the remaining 1/2 cup shredded cheddar cheese over the top. Return it to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
