Instructions

- Add potatoes and broth: Stir in the diced potatoes and chicken broth. Increase the heat and bring the mixture to a boil.
- Simmer the soup: Reduce heat to low and let the soup simmer for 10–15 minutes or until the potatoes are tender and cooked through.
- Make the roux: In a separate pan, melt the butter over medium heat. Stir in the flour and cook while stirring constantly for 1–2 minutes to form a roux, which will thicken the soup.
- Add milk and thicken: Slowly whisk in the milk into the roux mixture, stirring continuously until the mixture thickens and becomes smooth.
- Combine roux mixture and soup: Pour the thickened milk mixture into the pot with the beef and potatoes, stirring well to combine everything evenly.
- Add cheese and season: Stir in the shredded cheddar cheese until fully melted. Season with garlic powder, salt, and pepper to your taste. Mix thoroughly to blend all flavors.
- Serve: Ladle the soup into bowls and serve hot. Garnish with optional toppings like green onions or pickles if desired.
