Ingredients

  • ¼ cup maple syrup
  • 2 eggs (or flax eggs for vegan)
  • 2 tbsp coconut oil, melted
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven: Preheat your oven to 350 °F (175 °C) and line an 8×8 inch baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Mix dry ingredients: In a large bowl, combine the rolled oats, almond flour, cinnamon, baking powder, and a pinch of salt. Stir these together to ensure even distribution.
  3. Mix wet ingredients: In a separate bowl, whisk together the grated carrots, maple syrup, eggs (or flax eggs if vegan), melted coconut oil, and vanilla extract until well combined.
