Instructions
- Preheat the oven: Preheat your oven to 350 °F (175 °C) and line an 8×8 inch baking pan with parchment paper or lightly grease it to prevent sticking.
- Mix dry ingredients: In a large bowl, combine the rolled oats, almond flour, cinnamon, baking powder, and a pinch of salt. Stir these together to ensure even distribution.
- Mix wet ingredients: In a separate bowl, whisk together the grated carrots, maple syrup, eggs (or flax eggs if vegan), melted coconut oil, and vanilla extract until well combined.
- Combine wet and dry mixtures: Pour the wet mixture into the bowl of dry ingredients and stir thoroughly until the batter is smooth and all components are well incorporated.
- Pour and bake: Transfer the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25 to 30 minutes, or until the bars are firm to the touch and golden on top.
- Cool and slice: Allow the carrot cake bars to cool completely in the pan before slicing into 9 bars. This helps them set and maintain their shape.
