Caramelized Onion Butternut Squash Tart is a savory and elegant dish featuring sweet roasted butternut squash, rich caramelized onions, and creamy cheese on a flaky puff pastry crust. Perfect as an appetizer, brunch dish, or light meal, this tart combines Mediterranean-inspired flavors with a delightful contrast of textures.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

Pastry

  • 1 sheet puff pastry, thawed

Vegetables

  • 2 cups butternut squash, peeled and diced
  • 1 large onion, thinly sliced

Seasonings and Cheese

  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup goat cheese or feta cheese

Other

  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting and baking.
  2. Prepare Butternut Squash: Toss the peeled and diced butternut squash with olive oil, salt, and black pepper to coat evenly. Spread the squash on a baking sheet in a single layer.
  3. Roast Squash: Roast the butternut squash in the preheated oven for 20 minutes until tender and lightly caramelized. Remove and set aside.
  4. Caramelize Onions: Heat olive oil in a skillet over medium heat. Add the thinly sliced onions and cook slowly, stirring occasionally, until they turn golden brown and caramelize, about 15 minutes. Remove from heat.
  5. Prepare Pastry Base: Roll out the thawed puff pastry and place it on a baking sheet lined with parchment paper. Lightly score a border about 1 inch from the edge to create a frame for the filling.
  6. Assemble Tart: Spread the caramelized onions evenly over the center section of the pastry, inside the scored border. Distribute the roasted butternut squash on top of the onions. Crumble the goat cheese or feta cheese over the squash, and sprinkle thyme evenly across the toppings.
  7. Apply Egg Wash: Brush the beaten egg over the scored pastry edges to give a glossy, golden finish when baked.
  8. Bake Tart: Place the assembled tart in the oven and bake for 20 to 25 minutes until the pastry is puffed, golden, and crisp.
  9. Serve: Remove from oven, let cool slightly, slice, and serve the tart warm as an appetizer or light meal.

Notes

  • You can substitute ricotta cheese for goat cheese to create a milder flavor.
  • A light drizzle of honey on top before serving adds a complementary touch of sweetness.
