Ingredients
Chicken
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- Salt and black pepper to taste
Toppings
- 8 oz fresh mozzarella slices
- 2 tomatoes, sliced
- Fresh basil leaves
- Balsamic glaze
Instructions
- Preheat oven: Set your oven to 375°F (190°C) to prepare for baking the chicken after searing.
- Season chicken: Pat the chicken breasts dry, then season both sides generously with salt and black pepper to enhance the flavor.
- Sear chicken: Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and cook until golden brown on each side, approximately 3-4 minutes per side. This step locks in juices and adds a delicious crust.
- Add toppings: Place seared chicken breasts on a baking dish. Evenly layer fresh mozzarella slices and tomato slices on top of each breast.
- Bake: Transfer the dish to the preheated oven and bake for 15–20 minutes until the chicken is cooked through and the cheese is melted and bubbly.
- Garnish and serve: Remove from oven, sprinkle fresh basil leaves over the top, and drizzle with balsamic glaze for a tangy finish. Serve immediately.
Notes
- Serve with pasta, garlic bread, or roasted vegetables for a complete meal.
- Using cherry tomatoes instead of standard tomatoes can provide a sweeter, more concentrated flavor.
- Make sure chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
- For a twist, add a sprinkle of red pepper flakes or a drizzle of pesto before serving.
