Ingredients
Chicken and Seasoning
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
Additional Ingredients
- 2 tablespoons olive oil
- 1 cup cherry or grape tomatoes, halved
- 8 ounces fresh mozzarella, sliced or cubed
- Fresh basil leaves, for garnish
- 2 tablespoons balsamic glaze (optional)
Instructions
- Season the chicken: Pat the chicken breasts dry, then season evenly on both sides with salt, black pepper, and Italian seasoning to infuse flavor before cooking.
- Heat the skillet and cook chicken: Warm olive oil in a large skillet over medium heat. Place the chicken breasts in the skillet and cook for 5 to 6 minutes on each side, until golden brown and fully cooked through, ensuring a juicy interior.
- Add tomatoes and mozzarella: Lower the heat to low, then evenly top each chicken breast with the halved cherry tomatoes and fresh mozzarella slices or cubes.
- Melt the cheese: Cover the skillet with a lid and cook for an additional 2 to 3 minutes on low heat, allowing the mozzarella to melt gently over the chicken and tomatoes.
- Garnish and serve: Remove the skillet from heat, garnish the tops of each chicken breast with fresh basil leaves, and drizzle with balsamic glaze if desired for an added touch of sweetness and acidity.
Notes
- Use fresh mozzarella for the best flavor and creamy, melty texture.
- Serve this dish alongside pasta, rice, or a simple green salad for a complete meal.
- As an alternative, you can bake the seasoned chicken breasts at 400°F (200°C) for 20 to 25 minutes instead of pan-cooking.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
