Ingredients

6 ripe Roma tomatoes (finely diced)

2 garlic cloves (minced)

¼ cup fresh basil leaves (chopped)

2 tablespoons extra-virgin olive oil

2 tablespoons balsamic vinegar

½ teaspoon salt

¼ teaspoon black pepper

For the garlic bread:

1 loaf French baguette (sliced at an angle into ½-inch thick slices)

Olive oil spray

2 garlic cloves (for rubbing on the toasted bread)

Instructions

Preheat the oven: Set your oven to 450°F (230°C) and line a large rimmed baking sheet with parchment paper.

Marinate the tomatoes: In a large bowl, combine the diced tomatoesminced garlicchopped basilolive oilbalsamic vinegarsalt, and black pepper. Mix well and let the mixture sit to marinate while you prepare the bread.

Prepare the garlic bread: Place the sliced baguette on the prepared baking sheet and lightly spray with olive oil. Bake for about 5 minutes, watching carefully to prevent burning. Once out of the oven, immediately rub the garlic cloves on the warm bread slices to infuse them with garlic flavor.

Assemble: If serving immediately, add the marinated tomato mixture in a big mound on top of each toast. Alternatively, serve the tomato mixture on the side for people to top their own bread slices.
