Instructions
- Simmer Broccoli: In a large pot, bring the chicken broth to a simmer over medium heat. Add the broccoli florets and cook until they are tender, about 10-12 minutes.
- Add Cheese and Milk: Lower the heat and stir in the shredded cheddar cheese and milk or cream gradually, stirring continuously until the cheese is fully melted and the soup is smooth.
- Season: Taste the soup and add salt and pepper as desired. Stir to combine.
Notes
- For a thicker soup, blend a portion of the soup with an immersion blender or in batches using a countertop blender before stirring it back in.
- Use cream instead of milk for a richer flavor and creamier texture.
- To make it vegetarian, substitute chicken broth with vegetable broth.
