Ingredients
Vegetables
- 3 cups broccoli florets
- 1 onion, chopped
- 1 clove garlic, minced
Liquids
- 2 cups vegetable broth
- 1 cup milk or cream
Dairy
- 1 cup shredded cheddar cheese
- 1 tbsp butter
Instructions
- Sauté Onion and Garlic: Heat the butter in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant, about 3-4 minutes.
- Add Broccoli and Broth: Stir in the broccoli florets and pour in the vegetable broth. Bring the mixture to a simmer and cook for 10 to 12 minutes, or until the broccoli is tender.
- Blend Soup: Using an immersion blender or a traditional blender, blend the soup until it reaches your desired texture—smooth or slightly chunky, depending on your preference.
- Stir in Milk and Cheese: Return the blended soup to the pot (if using a traditional blender). Stir in the milk or cream and shredded cheddar cheese. Cook over low heat, stirring frequently, until the cheese is fully melted and the soup is creamy and heated through.
Notes
- Add a pinch of nutmeg or cayenne pepper to deepen the flavor of the soup.
- Use milk for a lighter version or cream for a richer, creamier soup.
- For a gluten-free option, ensure your vegetable broth is gluten-free certified.
- This soup pairs well with crusty bread or a side salad for a complete meal.
